Now that summer is coming to an end, there’s nothing like getting together with friends or family for some quality time at your Highpoint Community Apartment. It’s the perfect time to catch up, share some laughs, and of course enjoy a delightful meal with one another. What better time to take advantage of the BBQ & Picnic Area?! Many foods go great on a grill and are easy to cook, with minimal clean up as well. If you like fried potatoes, we think you will love this seasoned grill potato recipe. It is sure to be a winner with your friends or family, so be sure to prepare plenty. With this recipe, there is some room to wiggle the amount of the seasonings to suit your taste. This should serve between 4-6.
Take 6 large baking potatoes, wash, rinse, dry and cut into cubes. You can leave the skin on for added nutrition (or you can remove).
Remove 3 large sheets of aluminum foil and lie flat on a table. Place the potatoes in equal portions on the foil, so about 2 of the cut up potatoes will be on each piece of foil. Put 2-3 tablespoons of butter on top of each portion of potatoes (or more depending on how large your potatoes are. You want a generous amount).
For each portion of potatoes, put the following:
½ – 1 tsp. of garlic
½ tsp. of pepper
½ – 1 tsp. of sea salt
1 tsp. of Italian seasoning
1 tablespoon of parmesan cheese (or a bit less if it seems like too much)
Carefully close the foil and twist each end. Place on the grill until potatoes are crisp, yet juicy. The potatoes will be buttery, flavorful, with a hint of parmesan cheese. Delicious with hamburgers, chicken, or steak.
